Zucchini, Tomato and Chilli Bites - A Delicious Vegetable Snack


My fiancé hates vegetables so I am coming up with ways to sneak them into some of his meals.

While I don't cook every day (fiancé and I share cooking/cleaning duties), I do like to roll my sleeves up and cook at least a couple of days a week in order to have more nutritional meals on the menu.

Tonight I made Zucchini, Tomato and Chilli Bites - with Chillies straight out of my veggie patch!

Quick, easy and (somewhat) veggie filled!


1 Onion
2 Zucchinis
Half a cup of grated cheese
2 - 3 Chillies
10 Cherry Tomatoes

- Dice onion and fry in olive oil until brown
- Cut Zucchini into slices, place in grill while onion cooks
- Dice the cherry tomatoes
- Place cheese, onion, cherry tomatoes and chilli on Zucchini slices
- Grill for 10 minutes or until cheese is thoroughly melted
